Peppermint Mocha Muffins

This recipe is perfect for people who love coffee, chocolate and a dash of peppermint for that holiday delight! This recipe makes about 24 pieces of muffins, takes only 10 minutes to prepare, 17 minutes to bake and voila! You have muffins ready to eat and give guests this holiday. 

What do you need to make Peppermint Mocha Muffins?

  • 2 cups of unbleached all-purpose flour or bread flour (270g)
  • 1 cup of cocoa powder (87g)
  • 2 tablespoons of espresso powder (12g)
  • ½ of baking soda (4g)
  • ½ teaspoon of salt (4g)
  • 2 large eggs or 3 small eggs
  • 2 ½ teaspoons of baking powder (10g)
  • ½ cup of oil (preferably vegetable oil)
  • 1 ¼ cups of granulated sugar (270g)
  • 1 ½ cups of plain yogurt, full fat (375g)
  • ½ tablespoon of peppermint extract (5g)
  • ⅔ cup of mini chocolate chips

How do you make Peppermint Mocha Muffins?

Step 1: Preheat your oven to about, 375º F. Then ready your muffin tins by greasing them up or adding paper liners.

Step 2: Grab a small bowl and mix some of your dry ingredients! So that’s your flour, cocoa powder, salt, baking powder, baking soda and espresso powder.

Step 3: Once all your dry ingredients are mixed, get a large bowl. Now in that large bowl beat your eggs and sugar together. You can stop until it turns pale and thick.

Step 4: Then add in your oil and mix until it’s fully combined with your egg & sugar mixture. Then add in your peppermint extract and yogurt then mix until well incorporated.

Step 5: Afterwards, get your dry ingredients and mix them with your wet mixture. Simply fold the dry ingredients and try not to over-mix. 

Step 6: Now fold the chocolate chips in! Once mixed well, scoop your batter and place it into the muffin tin.

Step 7: Bake this for about 10 minutes then drop the heat to 350º F and make for an extra 5 to 10 minutes. Take them out when they’re baked all the way through. To check, use the toothpick method. Then leave them to rest on a wire cooling rack and tah-dah, you’re done!

Gingerbread Muffins with Lemon Glaze

What screams Christmas more than gingerbread? This recipe is perfect for the holidays and will surely impress family and friends! These muffins carry a delicious hint of spice paired with a zesty lemon glaze! This recipe makes 12 to 14 muffins and takes 15 minutes to prepare + 20 minutes to bake.

What do you need to make Gingerbread Muffins with Lemon Glaze?

  • ¾ cup of dark molasses (180ml)
  • ½ cup of unsalted butter (113g)
  • 1 ½ teaspoons of baking soda
  • 2 ⅔ cups of all-purpose flour or bread flour (334g)
  • 1 ½ teaspoons of grounded ginger 
  • ¼ teaspoon of salt
  • 1 ¼ teaspoon of ground cloves
  • 1 large egg
  • 1 ½ teaspoons of ground cinnamon
  • ½ brown sugar (100g)
  • ½ cup of milk (120ml)
  • ½ cup of plain yogurt or sour cream (120g)

For the lemon glaze:

  • 2 tablespoons of lemon juice (preferably fresh)
  • 1 cup of confectioners’ sugar (120g)
  • 1 tablespoon of milk (15ml)

How do you make Gingerbread Muffins with Lemon Glaze?

Step 1: Preheat the oven to 425º F. Grease your muffin tins or line them with a paper liner.

Step 2: In a large microwave-safe bowl heat the butter and molasses together on high for 1 minute max. After, whisk well until fully combined then set aside to cool.

Step 3: Now mix your dry ingredients! Grab your flour, baking soda, cinnamon, cloves, ginger and salt. 

Step 4: With your butter mixture, mix in brown sugar, yogurt, an egg and milk. Once incorporated, pour into the bowl of dry ingredients. Mix the ingredients “just right” but don’t over-mix. That batter will come out a bit lumpy and thick.

Step 5: Place the batter in the muffin tin and bake at 425º F for about 5 minutes then reduce to 350º F for 15 to 16 minutes or until the muffin tops start to crack in the middle. You can also use the toothpick method to make sure they’re baked all the way through.

Step 6: Let them rest on a cooling wire rack for 5 to 10 minutes before glazing.

Step 7: For the lemon glaze, simply mix all the glaze ingredients. Once the muffins are ready you can glaze them!
